Lagardere TR hosts chef community seminar showcasing culinary innovation & sustainability
Lagardère Travel Retail organized its second Internal Chef Community Seminar in Ljubljana, Slovenia on December 3-4, 2024. The event united 18 chefs from their global network and was held in partnership with UFS (UNILEVER) and Welbilt (ALI Group), focusing on innovative recipe creation and modern culinary techniques.
The seminar highlighted the significant role of Travel Retail Chefs and demonstrated Lagardère Travel Retail's dedication to enhancing traveler dining experiences. Hosted in Slovenia, where their acquired restaurant chain Marché has strong presence since 2022, the event concentrated on expanding and improving menu offerings in travel locations worldwide.
Building on quarterly collaborative sessions throughout the year, the seminar emphasized sustainable practices and responsible sourcing. The company reinforced its commitment to "purchase 100% eggs from cage-free hens for its internal brands by end of 2025" while promoting European Chicken Commitment standards among European subsidiaries.
Participants explored the "Light Kitchen" approach, an innovative technique optimizing resource use and preparation processes in space-constrained environments without extraction systems. This method ensures consistent quality while supporting both small and large-scale operations.
The seminar addressed sustainability through discussions on minimizing food waste and implementing responsible selection criteria. This included focus on sustainable farming certifications, fair trade practices, animal welfare standards and diverse dietary options including plant-based alternatives.
According to their latest figures, Lagardère Travel Retail operates over 5,120 stores across 42 countries, generating €6.6 billion (US$6.9 billion) in sales in 2023. Their operations span Travel Essentials, Duty Free, Fashion and Food service.
